Ingredients  :

Sauce
1 tablespoon unsalted butter
½ cup chopped yellow onion
1garlic clove, minced
⅓ cup ketchup
⅓ cup unsulfured molasses
¼ cup bourbon
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
½ teaspoon hot pepper sauce
Rub
1 teaspoon prepared chili powder
½ teaspoon salt
½ teaspoon black pepper
4 boneless center-cut pork loin chops, 1 inch thick
Vegetable oil
4 slices bacon

Directions :

1. Melt the butter in a good saucepan over medium heat; add the onion, and sauté for 5 minutes until golden brown; add the minced garlic and cook for approximately a minute, or until fragrant.
2. Bring the sauce to a simmer after adding the last few ingredients. Stirring often, reduce its heat to low, and simmer the prepared mixture for 15 minutes or until the sauce is somewhat thickened.
3. Pork chops should be brushed with ¼ cup of the sauce while they are grilling, and the remaining sauce should be served alongside the chops.
4. Mix the spice rub ingredients in a suitable bowl. Oil the chops on both sides, then rub the spice rub on them. Before grilling, let the chops rest at room temperature for 15 to 30 minutes.
5. Prepare the Traeger grill for direct cooking over 350 degrees F/ 175 degrees C.
6. Cook the bacon for 2 minutes on high in a skillet over medium heat until the grease has somewhat rendered. Each chop should have a slice of bacon wrapped around the outside and secured with a toothpick. 7. About 10 minutes into the grilling process, flip the chops once they are halfway done, then brush them with some of the sauce during the final 4 to 5 minutes of grilling. The chops should still be somewhat pink in the center. Take the food off the hot grill and give it 5 minutes to rest.
8. Serve the chops hot with the rest of the sauce.
