Ingredients : 

4 (12-ounce) cans of beer
2 onions, sliced into rings
2green bell peppers, sliced into rings
2 tablespoons unsalted butter more for the rolls
2 tablespoons red pepper flakes
10 brats, uncooked
10 hoagie rolls, split
Mustard, for serving

Directions : 

1. On your kitchen stove top, in a suitable saucepan over high heat, bring the beer, onions, peppers, butter, and red pepper flakes to a boil.
2. Fill your Traeger Smoker with wood pellets and follow the manufacturer’s specific start up procedure. Preheat, with the hood, closed, to 225 degrees F/ 105 degrees C.
3. Place a disposable pan on one side of the grill, and pour the warmed beer mixture into it, creating a “brat tub”.
4. Set the brats on the other side of the grill, directly on the grate, and close the hood and smoke for 1 hour, turning 2 or 3 times during grilling.
5. Add the brats to the pan with the onions and peppers, cover tightly with aluminum foil, and continue smoking for 30 minutes to 1 hour with the hood closed, or until a meat thermometer inserted in the brats reads 160 degrees F/ 70 degrees C.
6. Butter the cut sides of the hoagie rolls and toast cut-side down on the grill.
7. Using any slotted spoon, remove the brats, onions, and peppers from the cooking liquid and discard the liquid.
8. Serve the brats on the toasted buns, topped with the onions and peppers and mustard (ketchup optional).
